Washed Process (Full Wash)
Also known as the wet process, this method involves removing the coffee cherry’s skin and pulp before fermentation. the beans are then thoroughly washed and sun-dried. If This process is widely used in regions with access to clean water and is preferred for highlighting the bean’s original flavor.
Flavor profile: Clean, crisp, and vibrant. Washed coffees often have higher acidity with floral, citrusy, or tea-like notes.
Natural Process
The natural process, or dry process, involves drying the whole cherry under the sun before the outer layers are removed. This traditional method requires minimal water and is common in dry, highland areas.
Flavor profile: Rich, fruity, and full-bodied. Natural coffees tend to be bold with sweet, wine-like complexity.
Honey Process
In the honey process, the skin is removed but some or all of the sticky mucilage (called “honey”) is left on the bean during drying. It’s a hybrid method that requires careful attention and timing.
Flavor profile: Balanced and sweet. Depending on how much mucilage is left, the flavor can range from mild and bright to syrupy and intense.
